Yeah, there probably would be a couple. mysql2date() is one of them. get_the_date() is used on the front end.

Yes, you can use custom taxonomies with custom post types. In that plugin, if you go to the edit taxonomy screen for your taxonomy and there is a set of checkboxes to attach the taxonomy to post types.

Can you have a custom taxonomy that can be used within a custom post type? I'm using Custom Post Type UI plugin and that doesn't seem to be an option when I create a custom taxonomy and a custom post type, when I go to create a new custom post, the taxonomy box isn't in there.
